The cream cheese melts into the tops of super moist banana muffins as they bake and creates a delicious breakfast treat.
How to Make Banana Muffins?
For this easy recipe you’ll need just a few simple ingredients:
all-purpose flour
sugar and light brown sugar-brown sugar gives lovely caramely flavour that compement the bananas
oil and eggs
bananas-this is perfect way to use up ripe bananas that sit on your counter or days
cream cheese
vanilla extract
baking soda, baking powder and salt
pecans are optional-if you don’t like nuts in your banana muffins, just omit them. These muffins are so full of flavour even without the pecans.
Making these muffins is so easy. Separately whisk dry ingredients: all-purpose flour, baking soda, baking powder, and salt, then set aside.
In another bowl mix wet ingredients: mashed bananas, sugar, brown sugar, vanilla, oil, and an egg. Mix just to combine.
Add dry ingredients mixture and mix on low, just to combine. Fold in chopped pecans.
To make the cream cheese mixture, beat softened cream cheese, vanilla, sugar, and egg yolk just to combine.
Fill paper liners with banana mixture about 2/3 to ¾ full. Using a spoon, make a dent and drop a Tablespoon of cream cheese mixture in the center. Using a toothpick or a wooden skewer swirl the cream cheese and banana mixture just a little.
Place pecan halves on top of each muffin and bake for 18-22 minutes.
